Slow-Simmered Beef Stew with Mash

Ingredients (serves 4)
- 700 g stewing beef
- 200 g onions
- 400 g carrots
- 100 g celery
- 30 g flour (plain)
- 30 g tomato puree
- 700 g stock cube (made up)
- 25 g olive oil
- 8 g fresh herbs
- 900 g potatoes
- 30 g butter
- 100 g milk (semi-skimmed)
Method
- Brown the beef in batches; set aside.
- Soften the veg, dust with flour, add puree, stock and herbs; return the beef.
- Simmer very gently 2–2.5 hours until spoon-tender (add barley for the last 40 min if using).
- Serve with mash.
